Lacta chocolate started in the 1960s as Galacta, named for gala, the Greek word for milk. It turns out I love sugar best when it’s thrown into stark relief by acidity, which perhaps makes sense. I love that, unlike every other part of my food-related work, there’s nothing local, seasonal or organic about these candies. It doesn’t have to mean anything. There’s nothing but fun.

Florence explains: “It definitely goes against profit-making sensibilities, but we’d much rather encourage customers to buy what they really need instead of stockpiling everything at home. For example, a customer might come in asking for 200 grams of lentils, but we’ll suggest that they scoop out the lentils themselves and stop at an amount they’re comfortable with, rather than scooping  up that 200 grams straightaway. More often than not, customers realise that the amount they really need is far less than what they think they need.
