The credit crunch forced companies to turn to the cash-rich Mafia for help. “Italy is the third-biggest agricultural power in Europe,” says Professor Santino, “but the sector is vulnerable because it is very fragmented and a lot of companies are in financial difficulty. The Mafia have behind them all their illicit earnings, they lower the cost of production and they can absorb the effects of the crisis.”

Whenever I land in a new country, before I’ve even left the arrivals hall, my mind turns to shopping. Not the boutiques or cosmetics counters, no duty-free sunglasses and designer perfumes for me. It was, in fact, caramel-colored, but Kimmerle, a 48-year-old native Chicagoan who has written four books on candy and helps companies develop new recipes, was after something more specific. Basu said one area of pulse processing that needs improvement is dealing with the byproduct, which currently has little value.

If your product has size variation (i.e., waxy chemicals, coal, cereals or cheese shreds), a belt feeder or vibratory tray is best. If your product is dense and flows freely like corn, grains or sugar, a gravity bagging machine may be a better option.
